Ireland Whiskey Tours is a Dublin based Irish tour operator specialising in private, customised tours of Ireland with your own driver-guide. We are part of the Mint Julep Experiences family, the company that has spent more than a decade showing travelers the Kentucky Bourbon Trail, the Tennessee Whiskey Trail and everything worth stopping for in between.
A 2026 Icon of Whiskey winner, Gary combines deep whiskey expertise with over 20 years of experience in Irish tourism. His background includes working with Brown-Forman at Slane Distillery, a postgraduate qualification in Brewing & Distilling, and serving as Chairperson of the Irish Whiskey Trail.
Living in County Kildare and backed by Kentucky-based Mint Julep Experiences, Gary leads a team that creates private whiskey tours built around access, hospitality, and a deeper sense of place.
An Authentic Irish Tour Operator
Gary Byrne, a native Irishman, designs the itineraries, hosts the Founders Tour, and is the person most of our guests end up emailing years later. He knows which distillery will open a door, which hotel is worth the money, and which pub has the best music on a Tuesday.

How We Work
- Every tour is private unless it is a scheduled multi day departure, and even those run in small groups
- Our driver-guides are local, professional and genuinely good company, which is not always a given in this industry
- We use our own luxury fleet, sized from couples to large groups
